Synergistic effect of pulsed electric fields and temperature on the inactivation of microorganisms

Abstract Pulsed electric fields (PEF) as a new pasteurization technology played an important role in the process of inactivating microorganisms. At same time, temperature could promote electroporation, and achieve better inactivation effect. This article studied effect PEF on Saccharomyces cerevisiae , Escherichia coli Bacillus velezensis under different initial temperatures (room temperature-24 $$\mathrm{^\circ{\rm C} }$$ ∘ C 30 40 50 ). From results, it found reduce critical field intensity for microbial inactivation. After irreversible electroporation microorganisms occurred, nucleic acid content protein suspension increased with rate because cell membrane integrity was destroyed. We had proved that molecular transport through finite element simulation. Under electrical parameters (electric intensity, pulse width, number), lethal > velezensis.
